Choosing The Right Egg Substitute For Vegans

By Donald Cook

It is nothing new that in the last years there has been an increase in the number or vegans and vegan products. You can now find almost everything vegan at your supermarket and they are really good. But if you prefer to make things at home and select your ingredients more carefully, or baking is one of your passions, you may have found yourself in need of an egg substitute for vegans.

There are quite a lot of options, as you will see, and you will use the ones you consider the best for you in time. Some of them are great for cookies and generally sweet stuff, some for all recipes, some will just appeal more to you. Avocado, for example, works great with vegetable recipes, because it has quite a neutral taste.

One simple option is to use flaxseed meal, as it is easy to make and adds a lot of nutrition to your food. To substitute one egg, you would need to use mix 1 tablespoon flaxseed meal to 3 tablespoons of water and let it sit for around 5 minutes before using it.

Chia seeds are very used lately due to their increased nutritional value. Also, they expend in water and create some sort of a pudding, making them a perfect egg replacement as well. Mix 1 tablespoon of chia seeds with 3 tablespoons of water and wait 5 minutes. This can be used in various recipes, but take into account its darker color.

You can also buy ready-made vegan replacements that you may get online or in some stores. The texture is usually lighter than the ones with seeds and they are great in almost every recipe. You may also get gluten-free egg replacements, if you do not consume gluten. Follow the instructions on the package for the best results.

Another replacement would be to use some fruit puree. You may try using mashed pumpkin or sweet potatoes, avocado, bananas or butternut squash. Pear butter is also considered a good substitute, as well as unsweetened applesauce. Of course, the texture is different, and one would be better than the other based on the cake or cookie you need to make.

When deciding which one to use, take into account that some of them have a strong sweet taste that may affect the batter. Or even the color, for those that are bright yellow, for example. The applesauce is one of the plainest and can be used in many recipes. If you decide to use other fruit puree that may give a weird color, mix them in with chocolate or coffee.

With so many options to choose from, the next question would be the recipes you can use and great sweet vegan cakes that you can make. For example, there are a lot of cookies that you can make and incorporate your favorite fruit puree into them. Also, vegan muffins are everyone's favorite and will need fruit puree and flaxseeds. For a quick and healthy breakfast you can make various types of pancakes. Also, you may try your own combinations and discover great new recipes.
