Many Choose Mexican Food Catering For Their Company Gatherings

By Frances Morris

Most people associate catered meals with boring food unless the event is being catered by an upscale operation or restaurant with a strong following. However, this is not always the case, as some food service establishments take pride in their product. Those who have chosen a Mexican food catering company are often impressed by the wide selection.

Often they are surprised at the choices that are not hot, overly spicy or deep fried. While the flavor is a major component, there are many styles of cooking that offer layers of different flavors. Some dishes offer a citrus, savory, or smoky aftertaste without the intense heat these dishes are most known for.

There are also dishes that are ideal for those watching their figure. Fajitas can be made with chicken, seafood, or lean cuts of beef. Substitutions can also be made for dishes that normally call for a meat filling or are normally fried in a lot of oil.

More people are finding that this type of cuisine lends itself best to a healthy makeover when the right spices are included. For instance, anyone can make a rich adobo sauce that is healthy by adding more crushed tomatoes instead of flour. While many traditional dishes may have been cooked in manteca, also known as beef fat or lard, olive oils infused with dried chili peppers of garlic make a nice substitution.

Some people would rather use the services of a caterer who is experienced in preparing Mexican cuisine because of the labor that goes into most dishes. This type of cooking is not like the neighborhood fast food franchises. Anyone who does this regularly will say that some recipes take more than an hour to prepare.

In other words, shortcuts in this type of cooking should be few. Meats should be simmered to absorb the different flavors being added to the pot. The best tamales are not only made by hand but include ingredients that have been simmering for hours before assembly.

As the merging of cultures is becoming more common, chefs and home cooks are finding ways to make dishes appeal to different groups of people. Recipes that once called for shredded beef or pork are now being replaced by jackfruit, a fruit that is growing in popularity as a meat alternative. Instead of using beef or pork fat, virgin olive oil is being used more often for frying and sauteing.

Mexican desserts are also getting a new spin, as almond milk is being used in classics like rice pudding, horchata, and flan. There is even a vegan version of tres leche cake.

Those who find a catering operation that knows how to add the spice but with a healthy twist is one way to liven up the next gathering. People often feel better about attending business meetings or family gatherings when they know there is something special to look forward to. And if they do not feel too lethargic afterward, this is a good suggestion for trying something different.
