There are different types to choose from. There are different specifications and features for each of the sheet, so you need to choose wisely.

The most important thing is to utilize the ones that will help you achieve the desired results. There are different metals to be used for the sheets. However, not all of them are considered the best for the purpose. Aluminum is better known in this area because of good cooking results.

There are various choices for the trays that you can use. The best option would be to go for a heavier one that has a duller texture. According to most experts, this is a more expensive option. But since it is durable, you can make use of it longer.

As you can see, the rims and the height of the rims differ. You might be tempted to purchase the rimmed one. This is not advisable because it would not cook all of the things on the tray in an even manner. If you do have these types of sheets already, then you can make use of the bottom part as your new tray.

You need to remember that you still need to have a space for it to expand. The dough will still grow so it needs to have more space. And it will mean that you have to make use of a bigger space for them so that you can cook more as well. Just make sure that it does not exceed the capacity of the ovens.

There are also types that you need to stay away from. For a beginner, it is better to consider this early on so that you will not make frustrating mistakes onwards. It would be best to choose lighter colored ones. The darker ones will make the batch burn and brown more than what you anticipated. And as you know, most people are not very fond of over browned cookies.

It is also important to avoid the shinier ones. If it has a shiny texture then it would reflect light. And if this is the case, then it would be a problem for you because the temperature can increase. The cookies would get cooked faster than what you expected. Because of this, you will have an over browned result that is not really favorable for the taste buds.
